ROASTED BAINGAN BHARTA to which is added a smokey flavor by a simple technique is described. Additional garnishing with four day old mung bean sprouts adds to the taste of this refreshing dish. Basically it is a modification of the traditional Bihari dish CHOKHA with addition of tomatoes, green chili and garlic. You will just love it with Liti though it is equally savored with parathas and kachoris.
